Chocolate Fish Costa Rica Cerro San Luis

Roasted on 04/16/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.25. This one had an amazing thick mouthfeel with a lot of dark toffee notes and some delicate pear notes which were difficult to tease out. This feels like it would be a nice easy drinker drip.

I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. Orange front followed by some mild blackberry notes with a thick honey finish. The finer I went the more acidic it became which wasn't bad. I rather liked it.

Lots of Acidity, weirdly on the sweeter side and a dark stonefruit finish, like red cherry or a dark plum. I liked it although I felt it was mostly acidic and stonefruit notes.
