Temple Mexico Union Juraez Chiapas Muxbal Honey

Roasted on 09/14/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 7.0. 6.5-7 were all great, 6.0-6.375 were good. I was surprised that I didn't dislike this one, I am not normally fond of Chiapas coffee. Mostly clove notes, some orange blossom and honey.

Brandywine High Strangeness

Roasted on 08/14/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. Blueberries, Milk Chocolate, Citrus and Brown sugar and a strange Herby note I can't pin down. I used to like Brandywine a lot, but I haven't been impressed with the last couple coffees I had from them. If the herby notes were not there I would think it is good to average.

Equator Nicaragua Flor De Dalia Natural

Roasted on 08/05/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. Not the biggest fan, if I didn't know it would not have guessed this was a natural. Mostly cocoa notes, some molasses and dried fruit notes. Would be good as a drip, not so much as a pour over.

Chromatic Gamut

Roasted on 07/01/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. 6.25-6.5 were all good. 6.375 was the cleanest tasting. Lots of chocolate notes, a syrupy mouth feel and some generic fruit notes. Better as an espresso than a pour over.

Roasted on 07/02/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.125. Last time I dialed this in I was at 6.25 and it had a lot of blueberry notes, sadly it doesn't this time nor is it as clean tasting. Lots of milk chocolate notes with a thick body and some fruit notes. Ok for a regular drip.

I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.125. All the way up to 6.375 was great. Lots of Dark chocolate notes some black cherry and unripe plum. I liked it, it would be amazing if it was slightly lighter.
