2 second preinfusion. I think from now in I am going to be ommiting days that I don't work since I feel my coworkers actually do not dial in. Linea El Injerto Espresso : Roasted on 06/23/20 18.9g in 23 seconds 24g out Pretty mediocre, some raw sugar notes and a bit nutty. Tectonic Tectonic Blend Espresso: Roasted on 06/25/20 18.4g in 27 seconds 24g out Generic fruit at the front followed by chocolate. Counter Culture Slow Motion Espresso: Roasted on 6/25/20 18.8g in 18 seconds 30g out Pomegranate molasses and cocoa. It might be too young, but I cannot for the life of me get this to pull a consistent shot for longer than 20 seconds.

Linea Guatamala El Injerto

Roasted on 06/23/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.125. Lots of brown sugar, some orange blossom and a bit of lime tartness. Not that big of a fan, Linea is roasting too dark a lot recently.

Lots of nectarine notes, some astringent overburdened black tea and a little honey sweetness throughout. Not a fan of this still.

Proyecto Diaz Essencia Espresso: Roasted on 06/08/20 17.9g in 25 seconds 28g out More of a toasted hazelnut than yesterday, some chocolate, not as sweet as yesterday. Chromatic Gamut Espresso:  Roasted on 06/10/20 18.1g in 26 seconds 30g out Getting slightly fudgey with some bright red berry notes. Proyecto Diaz Essencia

Roasted on 06/08/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. Lots of rasins notes, some hazelnut and a caramel sweetness. 6.375 was almost my least favorite, but it was the cleaning tasting even if it was like a flash and gone. Might be good as an espresso, but kind of boring as a pour over.

My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.0. Potentially the best natural coffee I tried this year, however I do not really pay attention to naturals so much as region. Everything from 6.0-7.0 were good. 6.675-7 were less clean with some chocolate notes that were not as prominent in the rest. Primarily there were nectarine, strawberry and vanilla notes throughout; it was very juicy, crisp and clean.
