Barista Bitch Dialing In

Roasted 03/023 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 41. Raspberry, kiwi, juicy, very sweet and a little mushroom? Interesting, not the best Koji I've had, I feel like I have had so many El Vergel coffees that I am growing tired of all Colombians. 

Using a Niche Zero Grinder and an Anza espresso machine at 21, 18.3g in, 17 seconds and 24g out. Still surprising. Lots of woodsy notes, aromatic green vegetables, berry sweetness and malty. It still can use a little work, but it is very good as is.

Strong cedar notes, toasted barely, a lot of sweetness and green vegetables.
