Luminous Coffee Honduras 33hr Anaerobic Natural Juan Jose Ventura Fuentes

Roasted 03/22/23 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 36. Raspberry, Cacao, Mango and Black Cherry. I struggle to describe this as a fruit bomb, the cacao is a little overpowering and normally when I think of fruit bombs I think of something with more aqblueberry notes.

Tectonic Coffee Roasters Honduras La Tanairi Semi-Anaerobic

Roasted on 11/27/22 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 43. Plum, Bergamot, Jasmine and sweet. I love how floral this coffee is even though I don't normally care for bergamot in coffee (often I find coffees with black tea, bergamot, cinnamon or cloves as tasting notes a little too astringent for me and they tend to become primary flavors overwhelming everything else).  I can't wait to try this as an espresso. I guess this is a Semi-Anaerobic not a "normal" anaerobic because the coffee wasn't fully sealed during the fermentation process allowing has to escape.

Luminous Coffee Roasters Honduras Juan José Ventura Fuentes Finca La Lesquinada 33hr Natural Anaerobic

Roasted on 09/23/22 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 39. Orange, cacao, raspberry & black cherry. Reminds me a lot of Tico's Sangre De Toro, probably would be good as an espresso especially as it has those orthodox flavors that seem every espresso roast aims for.

Proud Mary Coffee Roasters Hounduras Benjamin Paz Là Salsa Geisha Double Anaerobic Washed

Roasted on 06/01/22 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 44. Chocolate, jasmine, honey and lemongrass. Not a fan. It was pretty lackluster. I still have a subscription to Proud Mary Coffee even though I have had maybe two coffees from them in the last year that I enjoyed. The others have been either ok, but not worth the price or bad.  I feel like they constantly send out mediocre geishas that I am always surprised at they claim they are deluxe coffee. I tried playing around a lot with my water composition and I cannot find anything that improves them.

Luminous Coffee Roasters Honduras Juan José Ventura Fuentes Finca La Lesquinada

Roasted on 04/24/22 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 45. I think there might have been something wrong with my sample or I tried it to soon, but it was incredibly ashy and had a weird funky smell. According to the tasting notes it is supposed to taste Floral, blackberry acidity, with a heavy mouthfeel and green apple. But I am ninety percent certain I did not receive the correct coffee or there was an issue with roasting. I don't think I have ever had a fermented coffee taste ashy.

Proud Mary Coffee Roasters Honduras Javier Hernandez Double Anaerobic Honey

Roasted on 06/04/2021 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 38. Lots of peach notes, lilac-like floral notes, some very sweet cherry and a good amount of acidity. I rather liked this. I tend to enjoy anaerobic, however I don't think this is as much of a fruit bomb some anaerobic are, in fact I don't think I have had any double anaerobics that are as intense as normals.

Chocolate Fish Hounduras El Tontolo Manguito

Roasted on 04/16/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. Orange front followed by some mild blackberry notes with a thick honey finish. The finer I went the more acidic it became which wasn't bad. I rather liked it.
