Dialing in 03/31/20

Worst part of today is paying rent and having the uncertainty of whether or not I'll be able to next month. Counter Culture Big Trouble Espresso: Roasted on 03/17/20 18.0g in 20 seconds 30g out I might try slowing this down tomorrow, I am not the biggest fan of Big Trouble as an espresso. I have it fairly light, but it is extremely well balanced and I can only taste but notes. Intelligentsia Honey Badger Espresso: Roasted on 03/20/20 18.6g in 24 seconds 24-27g out Much tarter and brighter than before, however the flavors are less distinct, mostly stone fruit. Equator Decaf Blend Espresso: Roasted on 03/05/20 15.2g in 16 seconds 30g out

Due to issues outside of my control I have decided to reevaluate whether or not I want to work in my current place anymore everyday. I have reached my limit and have no desire to interact with the majority of my coworkers. If I was not afraid of using my entire savings I'd quit, however I would not be eligible to unemployment. Tectonic Drift  Blend Espresso: Roasted on 03/15/20 18.0g in 20 seconds 30g out I have so little espresso in the hopper that I should honestly dial in a new one, but I just don't feel like doing so. Tectonic taste mediocre like it always does. Intelligentsia Honey Badger Espresso: Roasted on 03/20/20 18.7g in 23 seconds 24-28g out Just bright and tart. Plenty of citrus and plum notes, I have come to the conclusion that this espresso is just mediocre, it's neither complex and interesting or orthodox. Perhaps I can try more with it, but I am not sure. Equator Decaf Blend Espresso: Roasted on 03/05/20

Tectonic Drift Blend Espresso: Roasted on 03/15/20 18.5g in 26 seconds 28-30g out Mostly chocolate, but more stone fruit than before and a molasses like finish. I much prefer Shift blend to drift. While this isn't that dark, it is darker and less crisp. Intelligentsia Honey Badger Espresso: Roasted on 03/20/20 18.6g in 23 seconds 30g out According to my contact at Intelligentsia I should be pulling a much longer and slower shot, but I have only been able to get tart boring flavors when doing so. I'll think I'll try this as a ristretto next time I dial in.  Lots of plum notes, mostly tart, some sweetness and faint orange at the end. Equator Decaf Blend Espresso: Roasted on 03/05/20 15.1g in 15 seconds 30g out

Tectonic Drift Blend Espresso: Roasted on 03/15/20 18.5g in 24 seconds 30g out Weird today. Just chocolate and no matter how much I try I can not get anything else regardless of how much I change the parameters. Intelligentsia Honey Badger Espresso: Roasted on 03/20/20 There is a God, I am finally done with Temple Dharma. This is my first time with Hobey Badger so I do not have that great of grasp of it and so far I am not impressed. Mostly bright and sweet in a boring way. Lots of plum notes, a little citrus acidity and an all encompassing sweetness. Equator Decaf Blend Espresso: Roasted on 03/05/20 15.1g in 15 seconds 30g out

Cold Brew Recipe

So this is maybe my 10th or so iteration of my cold brew recipe. Right now I am brewing using Yama Cold Brew Drip towers, with Chemex Natural Bonded Square filters using my DittingKR1203 grinder. Right now I am using 4.5 as my grind, previously I was a little coarser at 5, but was not consistently happy with how the cold brew turned out. Using 300g miscellaneous coffee, often espresso, lightly condensed as I noticed some channeling that I couldn't fix no matter how much I leveled my grounds. After that I use 3000g iced water, bloom with roughly an inch or so water (around 300g) let sit for 10 minutes than adjust the flow rate so it drips at roughly 1 drop per 1.5 seconds. It should finish in around 12-16 hours with approximately 2600g uncut cold brew which I add around 900g water to or to taste. So 300g coffee at 4.5g with a chemex filter, add 3000g ice water, bloom with approximately an inch of water for ten minutes, adjust flow rate to 1 drop per 1.5 seconds finish in roughly ...

Tectonic Drift Blend Espresso: Roasted on 03/15/20 18.2g in 23 seconds 30g out Very syrupy, strong chocolate notes, some dark stone fruit notes and a hint of sweetness at the end. Temple Dharma Espresso: Roasted on 03/12/20 18.4g in 23 seconds 24-26g out Chocolate forward, still strong spice notes, crisper and cleaner than yesterday, not as much sweetness. A little berry as well. Equator Decaf Blend Espresso: Roasted on 03/05/20 15.1g in 15 seconds 30g out Going strong.

Eastern D.R. Congo Lake Hivu

This is the last of the blind tastings that I was given. I think if I could redo this experiment, I'd like to do things slightly differently, but honestly I don't know if I'd have the patience to do more. Maybe in the future I could standardize my tasting notes, but that seems like a little to much work for a "BasicBitchBarista". After some research, I found out each of these blind tasting coffees we're coffees that have been heavily featured by Starbucks at one point, but I don't think they are actually Starbucks coffees. I am not sure if my friend actually had coffees from the same region/farms/etc or if I have been decieved by the names on the bags. It had an overpowering sweetness with some light acidity and some spicy pepper notes. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Tectonic Drift Blend Espresso: Roasted on 03/15/20 18.2g in 23 seconds 30g out Not as balanced as yesterday, but not quite sharp. There is a bite to it, so some tart berry notes are coming through, but mostly chocolate. Temple Dharma Espresso: Roasted on 03/12/20 18.3g in 21 seconds 24-26g out Spice notes are coming through, but still a little murky. Lots of sweetness today and chocolate notes. Equator Decaf Blend Espresso: Roasted on 03/05/20 15.2g in 15 seconds 30g out

Tectonic Drift Blend Espresso: Roasted on 03/15/20 18.3g 25 seconds 24-26g out I am not a big fan of Tectonic's espressos and I generally prefer the lighter Shift to drift, but this was pretty good today. Mostly Dark Chocolate notes, some caramel sweetness and very faint stonefruit taste. Temple Dharma Espresso: Roasted on 03/12/20 18.0g in 20 seconds 22-26g out Interesting, but stills mostly generic chocolate notes and an odd spice aftertaste that I am not sure what I think of it. Counter Culture Big Trouble

Roasted on 03/17/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.675. This is what I've been using for my drip for a while now, but because demand is so low I decided to dial it in as a pour over so I don't need to waste a lot every day. It's surprisingly complex, I generally am not a fan of drip coffee so I was not expecting much from this. Lots of Walnut notes, some caramel and a bit of grain at the very end.

Counter Culture Ethiopia Idido Yirgacheffe

Roasted on 03/17/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. The last time I had it, I did 6.675, but I am starting to get bored with it. Lots of floral notes, primarily orchid, some honeydew sweetness, mild citrus acidity and a weird aroma that reminds me of unwashed potatoes.

Proyecto Diaz El Corazon Espresso: Roasted on 03/10/20 18.4g in 23 seconds 30g out Super sweet today. Just malt notes and chocolate, all the tart berry is gone. Temple Dharma Espresso: Roasted on 03/12/20 18.1g in 22 seconds 25-27g out Very chocolatey and some spice Equator Decaf Blend Espresso: Roasted on 03/04/20 15g in 15g seconds 30g Sad nothing I can do.

Tectonic Burundi Rimiro

Roasted on 03/15/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. I was stuck between this and 6.5, this one out by being juicer. Strong hobey sweetness, Somme dark rasin notes a bit of burnt sugar and straw. Not my favorite to be honest.

Dialing in 03/19/20

Proyecto Diaz El Corazon Espresso: Roasted on 03/10/20 18.3g in 23 seconds 30g out More balanced with a little extra sweetness today and sadly some of the tart berry notes are milder Temple Dharma Espresso: Roasted on 03/12/20 18.1g in 22 seconds 30g out Nothing new slightly more chocolatey than yesterday. Equator Decaf Blend Espresso: Roasted on 03/04/20 15g in 15g seconds 30g I should call this one Ol' Reliable.

Going forward I might be dialing in only one espresso since business is so slow from covid19 fear. I hope not though. Proyecto Diaz El Corazon Espresso: Roasted on 03/10/20 18.4g in 24 seconds 30g out Berry forward, less so then yesterday, strong hoppy notes, some chocolate and malty finish. It was fairly balanced today, with a medium body. Temple Dharma Espresso: Roasted on 03/12/20 18.2g in 24 seconds 24-28g out I think I am only pulling Dharma is a faux ristretto recently. It was slightly on the sharp side today. Lots of chocolate notes, some sweetness not as much as I'd like, and a strange anise finish. The body was on the thicker side today. Decaf Blend Espresso: Roasted on 03/04/20 15g in 15 seconds 30g out Nothing new here. Now that business is roughly a fourth of what it was I cannot justify wasting decaf when I pulled three shots yesterday with it.

Burundi Murmbi

Bind tastng cofee. Strong black  tea notes followed by a cinnamon finish. I do not know how I feel about this coffee at the end of the day. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Proyecto Diaz El Corazon Espresso: Roasted on 03/10/20 18.5g in 25 seconds 30g out Tarter than yesterday, still lots of berry notes, some wood and malt. Overall I prefer it to yesterday. Temple Dharma Espresso: Roasted on 03/12/20 18.3g in 23-24 seconds 24-26g out Bittersweet chocolate notes, some weird spice that I always struggled with and caramel sweetness. Equator Decaf Blend Espresso: Roasted on 03/04/20 15g in 15 seconds 30g out Once again I didn't redial this in, but today with my coworkers being afraid of what's to come in the coming days and whether or not we will be functionally unemployed for the foreseeable future.

Rwanda Hingakawa

Blind tasting coffee. Strong clove taste (that ultimately ruined this coffee for me) with soft floral notes and some orange sweetness. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Proyecto Diaz Chiapas Bella Vista

Roasted on 03/10/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. This has changed a lot since I last had it. I remember being very disappointed in November as it felt very orthodox then, it feels less like a Mexican coffee now. Strong Black Cherry notes, very juicy, some dulche de leche-like sweetness, some Brandy notes and very minor almond at the end.

Colombia Santana El Bolson

Blind tasting coffee again. This is certainly a juicy coffee with some crisp thyme notes and a strong tomato taste. It was like drinking thin tomato soup in coffee form and I loved it. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Equator Eye of the Tiger Espresso: Roasted on 03/05/20 18.6g in 26 seconds 30-34g out Very Bright and sweet mostly stone fruit today and some chocolate. Chromatic Keynote Espresso: Roasted on 03/09/20 18.0g in 25 seconds 30g out Fudge and sweet. I miss the days where Keynote was slightly tart with a honey aftertaste. At least it isn't as decadent as Gamut. Equator Decaf Espresso: Roasted on 03/04/20

Brazil Fazenda California

Blind tasting coffee. Strong toasted nutty flavor maybe a lighter walnut or hazlenut, with some lemon notes and brown sugar sweetness. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Equator Eye of The Tiger Espresso: Roasted on 03/05/20 18.7g in 25 seconds 30-35g out I keep going back and forth with whether or not I prefer Eye of the Tiger or Tigerwalk more, but this last year or so I feel like they have been playing around with how they consistently taste. Nevertheless strong bergamot notes, some peach and white grape sweetness. Tico Sangre De Toro Espresso: Roasted on 03/03/20 18.4g in 27 seconds 30g out Not as sweet or yesterday or as tart as the day before, but balanced. Strong almond notes with some dark chocolate notes as well as minor cherry ones. It feels like a Mexican coffee and I am starting to not like it. I always struggled with describing Sangre as anything, but homey. And now I am thinking it is just boring. Equator Decaf Espresso: Roasted on 02/26/20 15g in 15 seconds 30g out Once again I didn't re-calibrate this. I feel I might do it tomorrow so I don't have to deal with the aftermath, but who know.

Gotham Coffee Roasters Brooklyn Blend

Roasted on 03/04/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. Another one of those coffees that I liked at pretty much anything I tried it at. 6.5 and above were jucy, everything below 6.5 was a tad too dark. Strong dark chocolate notes with some light stone fruit (peach or light cherry) and very sweet. It was pretty good for a blend, but I think it would do very well as a drip coffee.

Dialing in 3/11/20

Equator Eye of the Tiger Espresso: Roasted on 03/05/20 18.7g in 26 seconds 30-32g Milk chocolate primarily, some bergamot notes and very bright. Tico Sangre de Toro Espresso Roasted on 03/03/20 18.3g in 23 seconds 30g out Predominantly Almond today, some chocolate and tart Berry notes. Equator Decaf Espresso: Roasted on 02/26/20 15g in 15 seconds 30g out Still ignoring recalibrating this for a while. It is ridiculously consistent, but boring.

Gotham Coffee Roasters Ecuador Finca Las Afiladeras Alberto Jumbo

Roasted on 03/04/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 7. Everything above 6.675 to 7.25 were pretty good. 6.25-6.5 were good, but not as good. It had some interesting malty notes, nougat and cardamon. I preferred the Finca Bruhwer Karla Garcia I tried from the other day, but this was nice.

East Timor Peaberry

Another blind coffee tasting. This was super spicy, a lot of hard to pin down floral aromas (maybe magnolia), predominatly grapefruit noteswith a molases sweetness. I loved this coffee, but I certainly do not want to drink more of it. I die for floral notes and tartness together. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Linea Caffe Espresso: Roasted on 2/27/20 18.3g in 24 seconds 24-26g out A bit too bland, but oddly subtle. Not really sutible for anything beyond a macchiato. Tico Sangre de Toro Espresso: Roasted on 3/3/20 18.5g in 21 seconds 30-35g out Much darker than I normally like and a slight off aftertaste. Counter Culture Colombia Santafe

Roasted on 3/5/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.675. This was one of those coffees that was pretty good no matter what grind I tried it at, buy ultimately I was never happy with it. I definitely think I could have done better with this coffee, perhaps not with a kalita. I had strong vanilla notes along with light rasins and nougat. It was a tad too dark for me, but not unpleasant. I definitely enjoyed it, but perhaps I don't like it because it has some potential that I didn't get.

Gotham Coffee Roasters Ecuador Finca Bruhwer Karla Garcia

Roasted on 3/4/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. Very interesting, a lot of darker stone fruits (plums, cherry, etc) notes, red winish and carmelizing sugar. There were some spice notes that I struggled with, almost cardamom like, but not quite. I rather enjoyed this coffee and would want to try it again.

I should note my process for these coffees. I am using 28g of coffee and 400g hot water, while I am not necesarilly aiming for any particular time, I am finishing on average somewhere between three and a half minutes and five. This was very delicate with a some cranberry-like tartness on the front with a chocolate finish, it had a nice thick mouthfeel. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Brazil Peaberry Samabala

Once again another blind coffee tasting, at this point I am starting to realize the flaws of this expriment. I wish I was not told the origins of these coffees, but at this point there is no point in changing the nature of it. I do not know if my friend plans on telling me who roasted these various coffees. This was kind of a boring coffee, there was tons of milk chocolate notes, a little honeyed sweetness and dried fruit. It was a very easy coffee to drink that is easy to enjoy, but not life changing. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Again this is another coffee that I do not know who roasted or even when it was roasted, I am assuming it is fresh, but it could be a couple weeks old for all I know. This was a super floral coffee, very reminiscent of that sickly sweet honeysuckle scent with some overpowering clove notes and a bit of dried apricots. I did not enjoy this coffee I am not a fan of coffees with strong spice notes, but it was interesting and not exactly and unpleasant experience. Nicaragua La Roco

This is my second coffee that my friend provided for me. This is an extrodinarily sweet coffee with tons of floral notes that taste a little like orange blossom water crossed with fresh hibiscus with a lot of dark stone fruit notes. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.
