S&W Roasting Zambia Kassama Anaerobic Espresso

Using a Niche Zero Grinder and an Anza espresso machine at 20, 18.5g in, 29 seconds and 27-31g out. Very sharp, slightly unbalanced, but pleasant nevertheless. Sharp citrus at the front, followed by milk chocolate, plum and tart tangerine at the end. I rather enjoyed it, the flavors were rather clean and while I feel I could have done more to make it more balanced I felt that I lost a lot of the cleanness and citrus notes.

S&W Roasting Zambia Kassama Anaerobic

Roasted on 01/12/2021 I brewed this in a Kalita wave using notneutral filters with a Baratza Encore grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 13. Lots of berry notes (more of a berry medely than anything specific), fresh bread, sweet wine and a tangerine finish. I enjoyed it, I struggle with whether or not to call this one a berry bomb generally when I do I think of a very crisp coffee with intense flavors whereas this isn't quite there.
