S&W Roasting Zambia Kassama Anaerobic Espresso

Using a Niche Zero Grinder and an Anza espresso machine at 20, 18.5g in, 29 seconds and 27-31g out. Very sharp, slightly unbalanced, but pleasant nevertheless. Sharp citrus at the front, followed by milk chocolate, plum and tart tangerine at the end. I rather enjoyed it, the flavors were rather clean and while I feel I could have done more to make it more balanced I felt that I lost a lot of the cleanness and citrus notes.

S&W Roasting Ethiopia Yirgacheffe Organic Worka Single Farm Natural Gelgelu Edema

Roasted on 01/12/2021 I brewed this in a Kalita wave using notneutral filters with a Baratza Encore grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 15. I might want to go slightly coarser, but think dark chocolate at the front, followed by berry acidity, some floral notes and a tad smokey.  I do not have much left, but I think going slightly coarser will give this a little more vibrancy, but I am afraid the smoke note might be inherent to the coffee and no mater what I adjust it will be present.

Lots of tangy tamarind notes in the front, with a weird grain like tastes that quickly disappears with a pleasant tart acidity throughout and a hint of fig at the end. While this was very aromatic I wish I could get a slightly cleaner tasting cup, nevertheless I think this would be nice as a daily drinker.

I enjoyed it, I struggle with whether or not to call this one a berry bomb generally when I do I think of a very crisp coffee with intense flavors whereas this isn't quite there.

Ritual Ethiopia Nano Challa

Using a Niche Zero Grinder and an Anza espresso machine at 22, 18.1g in, 31 seconds and 24g out. Tad too tart for me, lots of sour grapefruit notes at the front that quickly turns sweet, followed by some murky floral notes and ending with some hard to narrow down herby notes. I regret using this as an espresso, I feel that it would be much better as a pour over.
