Barista Bitch Dialing In

Roasted on 07/25/22 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 44. Red berries, chocolate and floral. Would be nice as an espresso or even as drip as a daily drinker. 

I've had a lot of coffee samples recently since I am setting up a cafe, hopefully as a multi-roaster. The owner of Tico Coffee Roasters brought some preground coffee as for a coffee tasting so these are a little different than how I normally write these.  Her recipe was 24g coffee with a 75g bloom at 205°F water for thirty seconds with an additional 300g pour in the clever and then start the pour down at 2:30 finishing roughly at three and a half minutes.  Last, but not least is the decaf. I liked it, I don't know why I never really served it before a bit orthodox, but better than many decafs I've tried. Chocolate throughout, orange syrup and roasted peanut.

Honestly this is a pretty good decaf espresso and pour over, it won't wow you, but better than many decafs I've tried.

So I have two coworkers who I will be working with on alternating weeks, both are pretty inexperienced. One of them is extremely annoying and is constantly testing my patience with her ineptitudes. She constantly tries to bring her "extensive" coffee experience in, which is working at Peet's in which everything she says is wrong. "Oh ai have never seen a cafinated white tea! All white teas are decaf [...]".

I remember seeing individuals like this throughout my career and have always avoided them, looking back most of not all their warnings would have helped me avoid certain pitfalls I have encountered.

The manager I have who has "coffee experience" is also incompetent. The other coworker I have who is out sick with covid is incompetent. All three have worked at the kind of places with no focus on quality and are used to just pressing a button and being done. One said she knew what good espresso looks like and doesn't has to weigh coffee from our horrible doser grinder or weigh the shot, which I tried and was awful tasting.  I am currently using a Nuova Simonelli Appia 2 and Bulova Simonelli MDXS doser grinders. I am honestly surprised that the company that makes the Mythos has made something as terrible as these two.  I promised myself the last time I left corporate dining that I would never work...

I've been working again as a barista again since this last Monday, but haven't felt like updating this since I have been struggling with two of my managers. I am currently working in corporate dining again, so you know coffee is never the focus and is an annoying afterthought that they are contractually obligated to provide, but no one in management has any desire to dedicate time or resources to.

Roasted on 04/28/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.125. not a great decaf, Temple tends to roast dark with little subtlety and this is no different. Milk chocolate notes throughout, some cherry and slight citrus acidity, but not enough to make this a good coffee. Although I guess decaf drinkers are used to this.
