Dialing in 08/25/20

3 second preinfusion. 195.7°F Tico Sangre De Toro Espresso: Roasted on 08/21/20 18.6g in 26 seconds 24g out As a ristretto I am getting more tart cherry notes as well as nutty chocolate ones.  Chromatic Gamut Espresso: Roasted on 08/08/20 18.5g in 27 seconds 24g out Very mild as a ristretto, but cleaner tasting with sweet berry notes before a generic chocolate taste. Sadly mouth feel is disappointing. Moksha Decaf Mexico Esmeralda Espresso: Roasted on 08/21/20 18.0g in 27 seconds 30g out Better than yesterday.

1.5 second preinfusion. I realized I haven't been playing around with preinfusion much recently or temperature for the matter, but I am trying to brew at 195.9°F to bring out a little acidity in my espressos today.  Tico Sangre De Toro Espresso: Roasted on 08/21/20 18.4g in 25 seconds 30g out Still too young, but I am getting cleaner cherry notes with lots of nut.  Chromatic Gamut Espresso: Roasted on 08/08/20 18.2 in 22 seconds 30g out I liked it better yesterday when it was sweeter, today it is thicker and more on the heavy side. Moksha Decaf Mexico Esmeralda Espresso: Roasted on 08/21/20 18.5 in 20 seconds 30g out Still too young and too dark for me. Brewing at 165.9°F certainly tastes cleaner than 200°F.

1.5 second preinfusion. Supposedly we are going to be open another week even though we announced this was our last day. Tico Sangre De Toro Espresso: Roasted on 08/21/20 18.0g in 25 seconds 40g out It's too young to be honest. Chromatic Gamut Espresso: Roasted on 08/08/20 18.6 in 27seconds 30g out Not as sweet or delicate as Friday.  Stumptown Decaf Trapper Creek Espresso: Roasted on 08/04/20 18.2g in 30 seconds 30g out

1.5 second preinfusion. It's 64°F inside, I am content. Stumptown Holler Mountain Espresso: Roasted on 08/13/20 18.0g in 25 seconds 30g out Very different from yesterday sweeter with lighter milk chocolate notes  Chromatic Gamut Espresso: Roasted on 08/08/20 18.1g in 26 seconds 24g out Amazing, very sweet and delicate  Stumptown Decaf Trapper Creek Espresso: Roasted on 08/04/20 18.1g in 30 seconds 24g out Still too tart

1.5 second preinfusion. It's 80°f inside.  Stumptown Holler Mountain Espresso: Roasted on 08/13/20 18.3g in 25 seconds 30g out Mostly sweet, slight acidity in the front.  Chromatic Gamut Espresso: Roasted on 08/08/20 18.5g in 25 seconds 24g out I am not happy with this one, hopefully when it cools down I'll be able to get more of the decadent chocolate notes I normally can. Stumptown Decaf Trapper Creek Espresso: Roasted on 08/04/20 19.1g in 25 seconds 30g out Slightly too tart, I am assuming because of the heat

Chromatic Gamut

Roasted on 07/01/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. 6.25-6.5 were all good. 6.375 was the cleanest tasting. Lots of chocolate notes, a syrupy mouth feel and some generic fruit notes. Better as an espresso than a pour over.

2 second preinfusion. Both espressos from equator are too young and temperamental. Chromatic Gamut Espresso: Roasted on 06/10/20 18.1g in 26 seconds 30g out Dark chocolate and thick. Equator Eye of the Tiger Espresso: Roasted on 06/19/20 19.0g in 23 seconds 30g out Very tart, mostly grapefruit and cocoa at the end. Equator Decaf Blend Espresso: Roasted on 6/19/20 18.4g in 30 seconds 20g out Dark as sin. I could not get this one to speed up.

2 second preinfusion for all three. Proyecto Diaz Essencia Espresso: Roasted on 06/08/20 17.9g in 25 seconds 28g out More of a toasted hazelnut than yesterday, some chocolate, not as sweet as yesterday. Chromatic Gamut Espresso:  Roasted on 06/10/20 18.1g in 26 seconds 30g out Getting slightly fudgey with some bright red berry notes. Stumptown Trapper Creek Espresso Roasted 06/04/20 18.1g in 23 seconds 30g out

Chromatic Gamut Espresso:  Roasted on 06/10/20 18.2g in 22 seconds 30g out Chocolate, but still not as decadent as I used to be able to get. Stumptown Trapper Creek Espresso Roasted 06/04/20 18.4g in 20 seconds 30g out Delicious. Still graham and dried fruit.

2.5 second preinfusion for all three. Proyecto Diaz Essencia Espresso: Roasted on 06/08/20 18.3g in 26 seconds 30g out Lots of chocolate and hazelnut. I had a shot pull around 20 seconds that was amazing, but I could not replicate it. Chromatic Gamut Espresso:  Roasted on 06/10/20 18.2g in 22 seconds 30g out Mostly chocolate. I am sad that I could not get this to taste as decadent and fudge-like as I normally can. Stumptown Trapper Creek Espresso Roasted 06/04/20 18.8g in 28 seconds 30g out Best of the three still.

3.5 second preinfusion for all three Stumptown Holler Mountain Espresso: Roasted 05/07/20 18.1g in 21 seconds 24g out 198.3°F I tried slowing it down, but wasn't happy with the results. Lots of chocolate and some sweetness throughout. Chromatic Holy Mountain Espresso: Roasted 05/05/20 16.1g in 21 seconds 40g out 198.3°F Preinfusion doesn't really do much for this, but it is delicious. Lots of Yuzu sweetness, a bit of toasted almonds and cocoa at the end. Decaf Equator Blend Espresso: Roasted 04/23/20 19.3g in 28 seconds 30g out 198.3°F Just woodsy.

I hope it is better as an espresso because this is just so-so.

Equator Eye of the Tiger Espresso: Roasted on 03/05/20 18.6g in 26 seconds 30-34g out Very Bright and sweet mostly stone fruit today and some chocolate. Chromatic Keynote Espresso: Roasted on 03/09/20 18.0g in 25 seconds 30g out Fudge and sweet. I miss the days where Keynote was slightly tart with a honey aftertaste. At least it isn't as decadent as Gamut. Equator Decaf Espresso: Roasted on 03/04/20
