Luminous Coffee Roasters Mexico Natural Anaerobic Finca El Huerto

Roasted 02/22/23 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 36. Rose, chocolate, cranberry and wine like. Did not expect this from a Mexican coffee, it is an anaerobic, but it had some surprisingly delicate notes. This felt like Valentine's day in coffee form.

My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 38. Fuji apple, poached pear, black grape and clove. I loved it, cloves were not as prominent as I feared.  .

Temple Mexico Union Juraez Chiapas Muxbal Honey

Roasted on 09/14/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 7.0. 6.5-7 were all great, 6.0-6.375 were good. I was surprised that I didn't dislike this one, I am not normally fond of Chiapas coffee. Mostly clove notes, some orange blossom and honey.
