Linea Ethiopia Suke Quto Reserve

Roasted on 09/01/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. Not a good Ethiopian coffees but good as a non-Ethiopian. Some city's acidity, a bit of floral notes throughout, mostly melon and peach or similar light stonefruit.

Proyecto Diaz Ethiopia Bedhatu Jibichu

Roasted on 06/08/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.0. Potentially the best natural coffee I tried this year, however I do not really pay attention to naturals so much as region. Everything from 6.0-7.0 were good. 6.675-7 were less clean with some chocolate notes that were not as prominent in the rest. Primarily there were nectarine, strawberry and vanilla notes throughout; it was very juicy, crisp and clean.

Equator Ethiopia Sidama Ardi

Roasted on 05/27/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. Pretty poor for an Ethiopian especially when this has been such a good year for Ethiopian coffees. Berry, Dark Chocolate, Sweet Lemon and Vanilla. Did not really like it.

Temple Ethiopia Haile Gebre

Roasted on 04/16/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. I like this better as an espresso, I struggled with how dark it is and was stuck between 6.5 and 6.75. It feels like slightly fruity diner coffee. I tried as fine as 6.25, but it just got too acidic and murky. Some blueberry notes with a lot of burnt sugar.

Tico Ethiopia Yirgacheffe Natural

Roasted on 04/06/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.75. I went back and forth on whether or not I should wait another day on this, but decided to dial it in today in part because I needed a new single origin, as well as the delivery person says that it fine to use immediately. I am not that impressed with this one. It has a weird potato chip-like aroma. There are tons of black cherry notes, some red berries and a soft ripe peach note at the end. While it was ok, it was just that. I am going to revisit this in a couple days.

Stumptown Ethiopia Duromina

Roasted 2/17/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. Buttery mouthfeel peach predominantly, honeyed sweetness, Bergamot 6.375. I was stuck on 6.375, 6.5 and 6.675, the coarser I went the less juicy and peach-y it became, but I felt 6.375 was a nice balence.
