Golden Lantern Coffee Roasters Ethiopia Yirgacheffe Aricha Washed

I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 36. Caramel, Blueberry, tropical fruits, very complex and sweetish.

Tico Coffee Roasters Ethiopia Yirgacheffe Natural

I've had a lot of coffee samples recently since I am setting up a cafe, hopefully as a multi-roaster. The owner of Tico Coffee Roasters brought some preground coffee as for a coffee tasting so these are a little different than how I normally write these.  Her recipe was 24g coffee with a 75g bloom at 205°F water for thirty seconds with an additional 300g pour in the clever and then start the pour down at 2:30 finishing roughly at three and a half minutes.  This was probably the lightest of the coffees Mariana brought and normally would be my favorite, but it came in a close second. Almost a berry bomb, but not quite. Black cherry at the front, berry jam, peaches and very clean.

Cosmic Dust Coffee Roasters Ceres Sky Espresso

Using a Niche Zero Grinder and an Anza espresso machine at 23, 18.3g in, 27 seconds and 50g out. I am not completely happy with how this turned out, it was a much bigger shot than I generally like and I feel that I had to keep going coarser. It was slightly muddy tasting, dark chocolate at the front and some plumot.

Cosmic Dust Coffee Roasters Ceres Sky

Roasted on 02/09/2021 I brewed this in a Kalita wave using notneutral filters with a Baratza Encore grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 13. Lots of dark chocolate with hints of guava. I was surprised at how dark this was roasted and I could still get fruit notes out of it. I have a feeling this will be better as an espresso.
