I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours.
6.75. I went back and forth on whether or not I should wait another day on this, but decided to dial it in today in part because I needed a new single origin, as well as the delivery person says that it fine to use immediately. I am not that impressed with this one. It has a weird potato chip-like aroma. There are tons of black cherry notes, some red berries and a soft ripe peach note at the end. While it was ok, it was just that. I am going to revisit this in a couple days.
