Barista Bitch Dialing In

Roasted 03/07/23 I brewed this in a Kalita wave using notneutral filters with a Niche Zero grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 41. Honeysuckle, hops, caramel and yuzu. Very good, definitely on the tarter side, something similar to an IPA without the bitterness.

Interesting, not the best Koji I've had, I feel like I have had so many El Vergel coffees that I am growing tired of all Colombians.

Not what I expected from a Sumatran, but at this point I should know better with Luminous.  Work has been very busy and I keep falling behind in my notes.

I went coarser then I normally like to go and was not disappointed. I haven't been that impressed with my Proud Mary Deluxe subscription and often think that my water is at fault, my water is relatively hard, but I actually enjoyed this.  I have been to lazy to play around with my water, I often find at home filtered or purified water leaves coffee too anemic for my taste and never really cared for Third Wave Water enough to use it often.

I try to do a 50g bloom in the first 45 seconds then three or four more pours. 37. Tangerine, floral and honey. Really good daily drinker, it might be a really good espresso too. I feel that most of the Pair Cupworks coffees are good, especially for the price, but I haven't been wowed by anything in particular, however I haven't been disappointed either.  I also have mixed feelings about their naming conventions, they definitely are minimalist, but I feel that they can give more info. At the same time I often doubt the validity of others claims to be a single origin, or a single microlot. I believe that there is more blending at origin than many roasters publicly acknowledge.

I loved the box, I wish it was a little brighter or more acidic then it was, but not bad. I tend to not care for coffees with collar notes, but this was pretty good. I recently have been struggling with appreciating things, always thinking of how something could taste better.

It sort of reminds me of a crisp apple.
