Counter Culture Hologram

Roasted on 04/21/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.25. 6.5 was very juicy, 6.375 was crisp, but 6.25 was the cleanest. Strong blueberry notes at the front and bittersweet chocolate after they pass.

Tons of oat milk today, too much to carry back though.  Counter Culture Hologram Espresso: Roasted on 04/21/20 18.6g in 24 seconds 24g out 200.7°F Sadly no fruit notes today, just chocolate and woodsy.  Equator Eye of the Tiger Espresso: Roasted on 04/11/20 19.1g in 22 seconds 30g out  200.7°F Incredibly sweet and mild. Dates and grapefruit notes. Stumptown Decaf Trapper Creek Espresso: Roasted on 03/31/20 15.1g in 15 seconds 30g out  200.7°F Anemic

Equator Eye of the Tiger

Roasted on 04/23/30 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. This was easy, everything above was too dark and everything below was too sour. Some Grapefruit notes at the front, followed by milk chocolate and dates at the end. I prefer this as espresso to a pour over.

Stumptown Holler Mountain

Roasted on 04/14/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. 6.375. I decided to try this as a pour over as an espresso it has had a lot more fruit notes than normal. Fruit forward with some sweetness and a lot of chocolate towards the end. It was incredibly juicy, I was stuck between 6.375-6.75, ultimately well less crisp I chose 6.375 because of how balanced it was.

3.5 second preinfusion on everything. Counter Culture Hologram Espresso: Roasted on 04/21/20 19.0g in 29 seconds 30g out 201.1°F The preinfusion added about three seconds on, but it brought out tons of slightly tart berry notes without it it was just chocolate. I might try speeding it up and doing a larger shot next time. Stumptown Holler Mountain Espresso: Roasted on 04/11/20 18.4g in 20 seconds 30g out 201.1°F Incredibly sweet mostly berry notes. Preinfusion didn't really add or detract from this one. Equator Decaf Blend Espresso: Roasted on 03/31/20 15.1g in 14 seconds 30g out 201.1°F
