Proyecto Diaz Yasinbay

Roasted on 2/12/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. I did not have enough coffee to satisfactorily dial this in. I ended up with 6.5, but I feel that I might be happier somewhere between 6.375 and 6.5. there was a strong almond taste to this, with some minor cinnamon notes. There was some sweetness to this, but it was overwhelmed by the almond notes. Again I wish I had a bit more coffee to dial this one in, but I feel that I probably would not like this that much more regardless. Coffees with predominant almond notes are always a little boring for me.

Decaf Costa Rica Hacienda Alsacia

A friend of mine has accused me of judging certain coffees too harshly because I am in her eloquent words, "a brand whore who likes pretty packaging" so she has kindly offered to give me coffee from different roasters to try that she repackaged in blank packaging. I do not know if she did not tell me before hand that I would have guessed it was decaf, but it has a nice lemon acidity maybe a little too on the tart side balanced with a mild milk chocolate note. I thought it was mediocre to be honest, I am not the biggest fan of citrus and chocolate tasting coffee, while easy to drink I often feel very bored with them. I brewed this in a kalita wave using notneutral filters witha BUNN G2 Trifecta SLVA.

Chromatic Keynote Espresso: Roasted on 2/20/20 18.7g in 25 seconds 26g out Strong cocoa notes, some caramel sweetness and a slight tart honey bite at the very end, not necessarily like how Keynote used to be a year or so ago where the honey notes were more prominent, but similar. Temple Dharma Espresso Roasted on 2/13/20 18.6g in 24 seconds 26g Still too dark. Strong milk chocolate notes, there are still these weird burnt caramel notes (maybe closer to when the caramelizing sugar is starting to burn) and some spice at the very end. I am starting to find that no matter what I do with Temple Dharma that I find it unpleasant, but so far I have not received any complaints about it. Decaf Equator Espresso: Roasted on 1/28/20 15g in 16 seconds 30g Again, I really have been wanting to recalibrate this to a higher dose, especially now that I am going through a lot less decaf espresso than I used to since I reduced my average input from 18-19g to 15. Still it is anemic, woodsy and ...

Stumptown Ethiopia Duromina

Roasted 2/17/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. Buttery mouthfeel peach predominantly, honeyed sweetness, Bergamot 6.375. I was stuck on 6.375, 6.5 and 6.675, the coarser I went the less juicy and peach-y it became, but I felt 6.375 was a nice balence.

Moksha Gsm Blend Espresso: Roasted on 2/11/20 18.1g in 24 seconds 30g out Predominantly Toffee, followed by baking chocolate notes, refreshing mint note and earthy finish. Temple Dharma Espresso: Roasted on 2/13/20 18.3g in 24 seconds 30g out Milk Chocolate, Burnt Caramel and spices. A little too dark. I should try a bigger shot next time maybe 35-40g. Decaf Equator BlendEspresso: Roasted on 1/28/20 15g in 16 seconds 30g out. Anemic and fleeting. Cedar/Woodsy and stonefruit maybe tart cherry.

Chromatic Coffee La Virgen

Roasted on 2/20 I brewed this in a Kalita wave using notneutral filters with a Ditting KR1203 grinder. My recipe is 28g coffee, 400g hot water not necessarily aiming for any particular time, but somewhere between four and five and half minutes. I try to do a 50g bloom in the first 45 seconds then three or four more pours. I settled on 6.5, but I seriously considered 6.375 and 6.675. I felt 6.675 had a better body, but was not as juicy as 6.5. the taste was predominantly  apricot or a similar stonefruit with a strange spice aftertaste. There was some acidity to it, but ultimately fleeting.

Moksha Gsm Espresso: Roasted on 2/11/20 18.1g in 26 seconds 26-28 out I am not a fan of Moksha on the best of days, but this was terrible in small drinks with a weird aftertaste I couldn't quite identify. It had a strong bittersweet chocolate note and an earthy note as well. Temple Dharma Espresso: Roasted on 2/13/20 19g in 24 seconds 30g out I am not the biggest fan of Temple, this combination of Temple and Moksha is my nightmare to be honest. The chocolate notes were dominate followed by a weird clove/nutmeg like taste. Equator Decaf Espresso: Roasted on 1/23/30 15g in 16 seconds 30g out Nothing new to report, it is anemic and fleeting.
